A Colorful Plate Year-Round

Our family is in the habit of going to a local farmers' market during the summer and fall to get farm-fresh fruits and vegetables. I admit that I have to work a bit harder during the off- season, when seasonal produce is less plentiful, to make sure that my plate is just as colorful. For overall health, eating a variety of fruits and vegetables is essential year-round.

A good starting place in your quest for color is the freezer case. Frozen melon cubes, berries, peach slices and even pineapple chunks are available year-round. Frozen spinach is one of my favorites for convenience-it is washed, cut and ready to be tossed into a soup or pasta dish. From a nutritional standpoint, it has just as much vitamin A and fiber as fresh-cooked spinach.

Next, stop in the canned fruit and vegetable aisle. "Our studies show that the nutrition value of canned fruits and vegetables is comparable to fresh and frozen varieties," notes Barbara Klein, Ph.D., professor of Food Science and Nutrition at the University of Illinois at Urbana. Dr. Klein points out that the canning process does not affect the amount of fiber in fruits and vegetables. Canned pumpkin, apricots, carrots and other orange fruits and vegetables are a rich source of vitamin A. "In fact, vitamin A levels in canned pumpkin are much higher than in fresh cooked because canned pumpkin is less watery and more concentrated," says Dr. Klein.

Finally, visit the cereal aisle. New technology for freeze-drying fruit enables cereal makers to add berries and other types of fruit to their products. Red, White and Blue Savory Potato Salad

Red, White and Blue Savory Potato Salad

Serves 8 to 10


6 large red potatoes, unpeeled

4 hard-boiled eggs, peeled

4 small green onions, thinly sliced (white and light green part only)

6 slices maple-smoked bacon

1/2 cup blue cheese crumbles (or one 4-ounce package)


Dressing

11/2 cups mayonnaise

1/3 cup minced Del Monte® Organic Sweet Bread & Butter Chips

1 tablespoon cider vinegar

2 tablespoons reserved bacon drippings

1 tablespoon prepared mustard

1/4 teaspoon celery seed (ground or whole)

1/4 teaspoon Tabasco® sauce

1 teaspoon ground black pepper

1/2 teaspoon salt

In a large pot of salted, boiling water, cook potatoes until fork tender. Drain; set aside. Cook and crumble bacon, reserving two tablespoons of drippings. In a medium bowl, stir together all dressing ingredients. If thinner dressing is desired, add small amounts of liquid from the pickle jar.

While potatoes are still warm, cut into small chunks. In a deep glass bowl, layer 1/3 potatoes, eggs and onions. Top each layer with 1/3 portion of dressing. Repeat two more times, ending with dressing. Top with crumbled bacon and blue cheese.

Did you hear of the lady, who walked into the pharmacist and asked for arsenic?

A couple are watching a film in their local theater when the wife snuggles close to her husband and points to the screen," Do you think that they will get married in the end?"
The husband sighs," Yes. These movies always have bad endings."

Tom visited the local library, walks up to the librarian and asks, "Do you know where I can find the book, the Supremacy of Men over Women?"
The librarian conducts a short search on the computer and looks up," you will be able to find it in the science fiction."

Conclusion:
While some of these might sound offensive, if you use them well you will be able to display not just a sense of humour, but also that you are exactly the opposite of the stereotype. How? Has this ever happened to you? You've been invited to a party and realize you don't have a meal to bring. Not only that, but the party starts in an hour. What should you do?

You have four options:

Don't go, and miss out on a really fun time.

Show up empty-handed and explain red-faced that you forgot.

Grab a casserole dish and head to the deli. Order your food and have them put it right into your casserole dish. Yes, I've gone this. It's expensive but it works. If you get asked for the recipe, just wink and say "It's Grandma's secret recipe".

Whip up a big batch of pasta salad for only a few dollars, and have plenty left over to eat for lunch during the week. You will save money and look good showing up at the party with a great dish.

Pasta salad is truly one of the easiest meals to prepare. All you need are noodles and salad dressing. You can use pretty much any salad dressing on the market – the standards like Italian, Ranch, or, if you're ambitious, your favorite homemade dressing.

Now for the fun part. Cook the noodles, following package directions and then drain. Pour the dressing on while the noodles are warm so they will absorb all that good oily flavor.

Look around your kitchen to see if you have any of the following ingredients:

Fresh veggies – carrots, broccoli, green onions

Frozen vegetables – frozen peas are wonderful in pasta salad

Cubed or shredded cheese

Garbanzo beans (also known as Chick Peas)

Black Olives

Toss in whatever you can find. It's an 'everything goes' type of recipe. Bring more dressing with you in case you need to add it later, and voila! You're done.

If you're feeling fancy, you can bring some cherry tomatoes, parmesan cheese, bacon bits or sunflower seeds as toppings. It's all good.

Baked Lemon Chicken with Mushroom SauceMaterial

Material

    * 6 skinless, boneless chicken breast halves
    * 1 tablespoon olive oil
    * 1 lemon
    * 1 / 4 cup butter
    * 3 cups sliced fresh mushrooms
    * 1 / 2 cup chicken broth
    * 2 tablespoons all purpose flour
    * 1 tablespoon chopped fresh parsley

Direction

   One. Preheat oven to 400 degrees F (205 degrees C).
   2. Place the olive oil in a glass 8x8 pan. Place chicken breasts in the dish, coating each side with oil. Squeeze lemon juice 1 / 2 lemon over all. Slice remaining lemon and place a slice of lemon on top of each piece of chicken. Bake in preheated oven approximately 30 to 40 minutes until brown.
   3. In a large skillet, melt butter 1 / 4 cup or margarine. Add the sliced mushrooms. Cook and stir until mushrooms are brown and their juices have been emitting, about 6 minutes. Sprinkle with flour and mix. Add chicken broth, stirring to make a medium thick sauce. Allow to reduce, adjust with a little more broth to make gravy. Add fresh parsley at the last minute. Spoon sauce over grilled chicken breasts with lemon. Delicious!
